Homemade Chicken Fried Rice

Do you love fried rice? I sure do! What's great about this recipe is that it uses up your leftover chicken, day old rice and leftover veggies! You can also whip it up from scratch easily enough. If you try this recipe, let me know what you think!!

 

 

SUPER SIMPLE

FRIED RICE RECIPEIMG_5504 

Ingredients:

  • 1 - 2 cups chicken (subsitute
    preferred protein)
  • 1 Tbsp veggie oil
  • 3 cups day old rice
  • 1 cup leftover veggies or frozen
  • 1/4 onion, roughly chopped
  • 2 garlic cloves, minced
  • 1 - 2 eggs
  • 1/2 tsp sesame oil
  • 3 Tbsp soy sauce

Instructions:

1. In a large pan, cook chicken (if uncooked). Remove and set aside.

 

2. In the same pan, heat veggie oil over medium heat and add onions and
garlic. Cook until onion is translucent (~2-3 min) 

 

3. If using frozen veggies, add and cook until partially thawed (1-2 min), if using leftover veggies, cook until mostly heated.

 

4.Add cooked rice stirring until rice is hot and starts to brown (~2-3 min)

 

5. Add chicken back to pan.


6. In a small bowl, mix soy sauce and sesame oil together. Pour over 
rice mixture, stirring until rice is evenly coated.

Salt & pepper to taste.


7. Move rice to edges of the pan, add in 1-2 eggs. Cooks eggs in the

center until cooked through. Mix into rice.

 

8. Serve hot and enjoy!

 

NOTES:

Day old rice is best: it will absorb the sauce better. This
recipe works great for leftover chicken and veggies. Mix in what you
like!
